Turkey Lettuce Wraps… Is it a Salad or a Sandwich!

Turkey lettuce wraps are a great meal when you want to cut down on bread but not on flavor! Just like the next guy or girl, I love a good sandwich. I mean, really love a good sandwich! But sometimes, when the weather is warm, and I want something other than a sandwich or a salad, I’ll make turkey lettuce wraps. They are the best of both worlds and what I prepared for lunch today.

This deconstructed turkey sandwich or reconstructed Cobb salad, is super easy and really great. I had sliced turkey in my refrigerator, fresh baby heirloom tomatoes from the farmer’s market, avocados, and delicious bib lettuce already in my house. It’s very versatile and you can use leftovers like grilled chicken or salmon if you are a pescetarian (vegetarian who also eats fish).

Sliced turkey, chicken or salmon
Bib lettuce
Avocado slices
Russian dressing (find this recipe in my salad section)*
Hard boiled egg (optional)
Fried onions for a little crunch (optional)

Rinse and dry your lettuce well. Spread a little dressing on the inside of a larger leaf. Fill the lettuce with a slice of turkey, avocado, slice of hard-boiled egg, baby tomatoes and roll up like a burrito, or fold in half.

So… is it a salad or a sandwich? You decide! Enjoy!

*You can use any dressing you like. When I make the grilled chicken wraps, I’ll use honey mustard dressing. For salmon wraps I use homemade ranch dressing. Experiment and see what combinations you come up with. Let me know how it goes!

I just had to post this photo of the heirloom tomatoes! They are really picture perfect and so sweet and delicious! My son is tired of hearing me say they are nature’s candy – but they truly are!

 

Power-up Banana Colada Smoothie!

SONY DSCToday our day started with what I call a Power-up Banana Colada Smoothie. During baseball season my blender works overtime. I’m either making them for my son as he runs out the door to practice or a game, or for myself and husband as dinner while we watch him play!

The past few weeks our weather here in Columbus has been freezing cold. I can’t remember the month of April ever being so frigid. Just the other day I thought my eyes were playing tricks on me when the thermometer read 33 degrees! It wasn’t a trick and that night I wore thermal pants under my jeans to the game! While wearing my earmuffs, scarf, gloves and winter coat I drank hot coffee out of my thermos all the while cheering for the team. Go Eagles!

Today is a new day, the sun is shining, it is 60 degrees, and the sky is crystal clear. Time to make the smoothies! Now that it has warmed up, I sent my son off to school with a Power-up Banana Colada Smoothie. It was so delicious, filled with fruit, protein, and easy to make. I think I’ll make one to take with me to the game tonight. When I take a smoothie to the field and feel the light breeze, I pretend I’m sitting on a lounge chair by the pool! I think it’s time to put the thermos away until next winter! Enjoy!

Makes one 16 to 20 ounce serving.

1 cup plain or vanilla Greek yogurt
1 cup frozen bananas
1/2 cup crushed pineapple with juice
1 tablespoon almond butter
1 teaspoon maple syrup or
2 dates for sweetness (optional)
1/4 teaspoon coconut extract

Place all of the ingredients in a blender and blend until smooth. This should take about
30 seconds to a minute. If it’s too thick, you can add some more pineapple juice, milk or some crushed ice.

Happy Valentine’s Day! How do You Tell Someone You Love Them?

In the spirit of the week, Happy Valentine’s Day! How do you tell someone you love them?

I’m not a huge fan of this holiday although you’d never know it by the amount of baking and candy coming in and out of here the past few days! My mother called it “a card store” holiday. She always said if you love someone, tell them or show them now, don’t wait for a card company to tell you to do it. Of course she was was right, and I’m glad she taught me that. The last words I said to her were I love you. I have held that that in my heart everyday for the past 21 years.

That’s the funny thing about love, you carry it with you even when the person lives far away, doesn’t call, forgets your birthday, or is no longer with us. So in light of this, how can you not be captivated by a holiday that is all about love? How do you tell them you love them?

If you have someone you are in love with, infatuated with, smitten with, enchanted by, fascinated by, or bewitched by, don’t wait until tomorrow to tell them. Do it now – never wait – pick up the phone and say I love you. My 10 year old niece Amanda knows this. On Monday she put a little bag of candy in her mother’s purse with a note on it. She does things like this all the time. When she comes here for a visit, she leaves little love notes and drawings on post-it notes all over my house which I find for weeks after – pure love. On Tuesday, I received a package in the mail from my niece Brette and her husband Adam. It was a box of ruggalach from a new place in NYC I wanted them to try. I had no idea I would be trying them too! I was so surprised. I’ll be writing more about this in an upcoming post. Last week I sent a cozy blanket to my sister-in-law Cathy, “just because” It’s something she did for me in the fall which I have been meaning to share with you  – see the photo below.

This is the box I received from my sister-in-law Cathy. She sent it sometime last September. It was such a surprise! I loved every bit of it down to the notes written on scraps of paper! How cute are the baby spoons and toothpicks?

Most holidays I send baked goods to family as friends. Valentine’s Day, I send cookies to people that aren’t expecting them and it’s quite a surprise. I’ll usually pick someone I haven’t seen or spoken to in years. Tomorrow I’ll go into the post office and bring Janet a bag of cookies too. I’m always mailing out cookies and this year, I think I’ll bring some to her. So follow my lead. Bring someone candy on the 10th of February, call me and order a special box of goodies for your college student – for no reason, send someone flowers on March 14th, apologize to someone if you’ve upset them, write a love note just because, send someone a cozy blanket, leave chocolate kisses on a loved one’s pillow, bring a friend or co-worker a cup of coffee with a note on the cup, give beautiful strawberries without chocolate on them, write a poem – it doesn’t have to rhyme, send someone something in the mail by surprise, and most important… tell them you love them every single day – don’t wait until tomorrow!

On this day, Friday, February 13th (yikes! it’s Friday the 13th!) I am heading into my kitchen to get ready for the farmer’s market. Tomorrow, you can find me at 400 West Rich Street Farmer’s Market sharing the love with… Red velvet caramel popcorn, caramel apples all decked out for that special someone (could be yourself, in fact why not you?), valentine candy, and maybe even a special valentine granola mix! Time to get to work!

Hey Northeasters, Here’s a Recipe to Keep You Warm during the Storm… Brisket Chili!

Brisket Chili. Need I say more? I don’t think so, but I will! Today there are a lot of people snowed in – in the northeast. What better time to stay home all nice and warm and cook all day? When I spoke to each of my sisters in New York, they were both very busy cooking! One sister spent the day making soups; she made chicken and lentil. The other sister made meatloaf, turkey chili and meatballs. Wish I was there to enjoy their bounty of deliciousness with them! Recently, I had my own freezing cold day where I stayed in and cooked all day. One of the things I prepared was brisket chili. I usually make turkey but this is where the Barefoot Contessa comes in. I was watching television and her show came on. It was the episode with her friend Devon’s award winning brisket chili recipe.

Ina Garten, aka the Barefoot Contessa, really knows how to live it up. She’s always having friends over to cook, bake, BBQ, decorate with and let’s not forget how much she likes surprising her husband Jeffrey with something (usually chicken)! In this episode, her friend Devon joined her to teach her how to cook her Award-Winning Chili and of course, to surprise Jeffrey! When Ina asked Devon why brisket, she simply said because it’s New York Chili – that’s why! I guess that’s as good a reason as any!

When seeing the show, I remember the first thing that popped into my head was – wow! that is a lot of spice! Then when Ina tasted it, she confirmed what I was thinking! The second thing was… brisket that’s extravagant cut of meat for chili. I had never thought of using brisket. For one reason, we don’t eat very much red meat in my house. Second, we keep kosher and kosher brisket is a very expensive cut of meat to turn into chili. As I watched her make it, I knew I had to try it. Even though I knew there was no way I was adding as much cayenne and chili pepper to it as she did! They added 2 tablespoons of chili powder, 1 tablespoon of red pepper flakes, and 1 tablespoon of cayenne pepper! Talk about hot! It was enough spice to melt all the snow in the northeast!

Anyway, as luck would have it, I was at my butcher last week and all they had was chicken. Yes, I said chicken – hang in there with me I’m getting to it! David, the nice man that works at the butcher shop, walked out from the back with a tray of brisket, but before seeing what it was, I made a joke and said “where’s the beef!” Then he showed me what he was about to put in the showcase. It was beautiful brisket, but the price – not so beautiful to use for chili! That’s when he leaned over, nudged me in the elbow and asked me if I like stew meat? I said yes, when I make stew. He said this is very special stew meat, you’ll never see it here again and he whispered, it’s the leftover brisket scraps at stew meat prices! I put every package in my cart and headed to the register before someone stopped me.  Brisket chili here I come!

This is a very loosely adapted version of Devon’s Chili recipe. I want to give credit where credit was due but please note, I did change it quite a bit. The first time I made it last year, I made it close to the recipe but altered the spice to our liking (especially since Ina said it was so hot). This time around, I made it my own and added celery and more peppers plus, I like using canned tomatoes for chili. If interested, her original can be found on the Food Network website. Enjoy!

5 pounds beef brisket, cut in 1-inch cubes
3 tablespoons olive oil
2 cups chopped sweet onions
1 cup celery diced
3 peppers of any color seeded and diced (I used one of each, yellow, orange and red)
6 large garlic cloves, minced
1 bay leaf
2 (28 ounce) cans of diced tomatoes with their liquid
1 (14.5 ounce) can tomatoes with mild chili’s
1/2 cup strong coffee (I used decaf)
1 can white cannellini beans rinsed and drained
1 can red kidney beans rinsed and drained
salt and freshly ground pepper to taste
1/2 teaspoon chili powder (or to taste, more if you like it spicy!)
1 teaspoon cayenne pepper (or to taste, same as the chili powder)
2 tablespoons chopped basil leaves

Serve with: Diced tomato, Shredded Lettuce, Brown Rice, Corn, Tortilla chips, Guacamole or other condiment you like with your chili.

This recipe makes 8 to 10 servings

Directions
Pat the brisket cubes dry with paper towels. Heat the oil in a very large heavy-bottomed pot and quickly brown the meat, in batches, on all sides. Transfer the brisket to a separate bowl and set aside. Saute the onion and garlic in the same oil over medium heat until limp, but not brown, about 5 to 8 minutes and then add the celery and saute another 5 minutes until translucent.

Add the tomatoes with their juice, the reserved meat, chili powder, cayenne pepper, and bay leaf and bring it to a boil. Reduce the heat, cover the pot with a tight fitting lid and simmer for 2 1/2 hours, stirring occasionally. At this point it should be perking gently not bubbling rapidly. Taste and season with salt and pepper to your liking. Add the coffee and the diced peppers and cover the pot allow to simmer for 1 more hour or until the brisket is very tender.

Add the beans and basil, and warm through for about 15 minutes. Adjust the spice according to your taste. Transfer the chili to a large serving bowl and serve with whatever you like on the top.
